Moroccan Salmon fish with Garlic Mayonnaise

INGREDIENTS
GARLIC MAYONNAISE:
1/2 cup mayonnaise, 1 clove garlic, crushed, 1/8 teaspoon paprika, SALMON FISH
1/2 cup couscous, 2/3 cup orange juice, 1 (14.75 ounce) can red salmon, drained
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
2 egg yolks, beaten , 2 cloves garlic, crushed, 1 teaspoon ground cumin, 1/2 teaspoon ground black pepper, salt to taste, 3 tablespoons olive oil
Preparation
In a small glass bowl, stir together mayonnaise, garlic, and paprika. Set aside, Prepare couscous according to package directions, use of orange juice in place of water. In a mixing bowl, combine the cooked couscous, red salmon, drained spinach, egg yolks, garlic, cumin, black pepper, and salt. Form into patties. In a large skillet over medium heat, heat the olive oil and fry patties until golden brown turning once, about 8 to 10 minutes. Serve with garlic mayonnaise.

Cod with Lemon Caper Sauce

Ingredients
4 Tbsp butter, 4 small clove garlic, finely minced , 2 tablespoons lemon juice, 1Tsp lemon zest , 4 Tbsp of capers, drained and rinsed, chopped,1 Tsp fresh chopped parsley, olive oil, 8 fillet Cod fish, salt and pepper, 1 Tsp French mustard.
Preparation
In a small skillet over low heat, melt butter; add garlic, lemon juice, zest, and capers. Simmer for 5 mins, Add salt & pepper to taste, Stir in parsley. Remove from heat. Keep aside.
Marinade Cod fish with salt & pepper, mustard, Heat the grill, Coat flour and dust well before grilling, place fish and grill it, turning carefully, Drizzle warmed lemon caper sauce over the Cod fish before serving. Serve sauce separate if necessary.

Grilled Salmon Steak

Ingredients:
4 Salmon steaks, good quality, about 1-inch thick, Marinade, 1/4 Cup soy sauce, 1/4 Cup cooking sherry, 1 Tbsp fresh lemon juice and 1/2 Tsp lemon zest, 2 Small clove garlic, crushed and minced , 3 tablespoons olive oil, Sprinkle few crushed black pepper.
Preparation:
Arrange fish in a shallow dish. Whisk together marinade ingredients in a small bowl; pour over steaks. Cover and refrigerate for 2 to 2 ½ hours, turning frequently. Place fish on a well-greased grill, and grill over medium heat for about 3 to 4 minutes, basting frequently with marinade. Turn and cook for 3 to 4 minutes longer, or until fish is nicely done.Serves with jacket potato and choice of salad

Grilled Tuna Steak

Ingredients
4 Fresh tuna steaks, 1 bottle Italian dressing, Salt & pepper to taste.
Preparation
Marinate tuna steaks with Italian dressing, Salt & crushed black pepper for 2 to 3 hours, Place on hot grill , Grill for 6 to 8 minutes each side until done. It will easily known when fully done, Its great in summer with garden peas and choice of salad
